Soft Pretzel Bites

Ingredients 

1 1/2 cups warm water

1 tablespoon sugar

2 teaspoons kosher salt

1 package active dry yeast

4 1/2 cups all-purpose flour

2 ounces unsalted butter, melted

10 cups water

2/3 cup baking soda

1 large egg yolk beaten with 1 tablespoon water (for egg wash)

Pretzel salt, or any coarse salt

Vegetable oil – for work space  

Step 1

Get out all necessary ingredients.

Step 2

Combine warm water, sugar and salt in a bowl and sprinkle the yeast on top. Let sit for 10 minutes.

Step 3

Add flour and butter and mix on low until well combined

Step 4

Knead dough for 5 minutes or until the dough feels smooth.

Step 5

Roll dough into a ball and place in a well oiled bowl and cover. Let sit in a warm place for 1 hour or until dough has doubled in size.

Step 6

While you’re waiting:

  • Preheat the oven to 450 degrees.
  • Boil your water and add baking soda to it.
  • Beat your egg yolk and water to make an egg wash.
  • Get out two sheet trays and cover with parchment paper.

Step 7

Once the dough has doubled in size, oil your work space and gently place the dough onto the table.

Step 8

Divide your dough into 8 equal parts and roll them out into 18-inch ropes.

Step 9

Cut these ropes into ¾ inch pieces.

Step 10

Place your cut pretzel dough into the boiling baking soda water about 5 at a time and boil for 30 seconds.

Step 11

Remove with a slotted spoon, brush with egg wash and sprinkle with salt.

Step 12
